An At-Home Date Night with My Sweetie and Seafood Chowder

      Even though Nicole and Kelly are both off at college and Alex is a junior in high school, it still seems odd when Steve and I find ourselves at home without any of the kids around.  That's just what happened on Saturday night.  Neither one of the girls had come home for the weekend and Alex was busy performing in his school play (which we'd already been to several times).  So it was just the two of us.  Earlier in the week I thought that maybe we'd go out somewhere for dinner, but in the end we both felt like staying home for the evening.

     Since we decided to stay home, I thought it would be nice to make something special for dinner, have some wine and enjoy each other's company.  The meal that came to mind for me was seafood chowder, it feels very special but it's really not that difficult to make.  It also makes a large batch, so I knew there would be plenty of leftovers to freeze for later.  To round out the meal I very simply dressed some mixed greens with really good quality balsamic vinegar and olive oil and I spread some crusty multi-grain bread with garlic herb butter and popped it under the broiler.  Add to that Earth, Wind and Fire radio on Pandora and we had all the makings for a lovely date night!


Seafood Chowder
 Adapted From Pampered Chef's Celebrate



  • 4-5 medium red potatoes, cut into 1 inch cubes (about 1 lb)
  • 1 medium onion, chopped
  • 2 large carrots, chopped
  • 2 large ribs celery, sliced
  • 1 medium red pepper, chopped
  • 2 - 6 1/2 oz cans chopped clams, drained, reserving clam juice
  • 1 tbsp butter
  • 4 cups Chicken Stock
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 3/4 cup flour
  • 2 cups half and half
  • 1 lb bay scallops
  • 1 lb cooked medium shrimp peeled and tails removed
  • 2 tbsp parsley, finely chopped


Chop all of your veggies.


Drain clams, reserving clam juice.  If clam juice does not measure 1 cup, add enough water to equal 1 cup.


Melt butter in a large dutch oven.
Add onions, carrots, celery and red pepper. Cook for about 3 minutes and the  add potatoes and continue cooking until onions are translucent



Add clam juice, chicken stock, salt and pepper.  Increase heat and bring to a boil.  Reduce heat, cover and simmer for 5 minutes or until potatoes are tender.





Meanwhile, place flour in a medium size bowl and gradually whisk half and half into flour.  Whisk until smooth.



Add clams, scallops and shrimp to chowder.  Gradually whisk in flour mixture.  Return to a boil and cook two minutes or until thickened, stirring constantly.  Add parsley and taste to see if chowder needs more salt or pepper. Cover until ready to serve.

Chicken Pot Pie: Must Have Comfort Food!

      Since we went off of daylight savings time, I like the fact that it doesn't take until 8:30 in the morning for the sun to actually be up in the sky, but I hate the fact that by 5:00 in the afternoon it is nearly dark.  It makes me want to curl up in a ball until spring.  Since I know I can't do that, it makes me crave all things comforting.  Sitting in front of the fire with a cozy blanket, drinking steaming hot tea by the gallon, and eating my favorite comfort foods.

     This week I was really craving some comfort food, so I decided that I would make individual chicken pot pies.  It wouldn't be just any pot pie, though, I wanted to make it a little special.  So for mine, I added white wine to the sauce and seasoned it with herbes de' provence.  I will admit that I did cheat on the pie crust, I used refrigerated, but I am severely challenged when it comes to making pie crust.  I'm just not very good at it, although it is on my list of things that I would like to master, so maybe someday....


Individual Chicken Pot Pies



  • 1 1/4 lb package boneless skinless chicken breast
  • 2 tbsp olive oil, divided
  • 2 large carrots, sliced
  • 2 large stalks celery, sliced
  • 1 medium onion, chopped
  • 4  medium red potatoes, cut into 1 inch pieces
  • 1 medium onion, chopped
  • 2 tsp herbes de' provence
  • 1 bay leaf
  • 3 tbsp butter
  • 1/3 cup flour
  • 1/2 cup white wine
  • 3 cups chicken stock
  • 1/2 cup milk
  • 1 cup frozen peas
  • salt and pepper
  • 1 package refrigerated pie crust
  • egg wash


Preheat oven to 350 degrees.
Chop all of your veggies and cut your chicken up into bite size pieces.



Heat 1 tbsp olive oil over medium high heat in a dutch oven or large skillet.  Once oil is hot, add chicken and season with salt and pepper.  Saute until chicken is no longer pink.  Remove chicken from pan and set aside.



Add remaining tbsp of olive oil to pan and reduce heat to medium.  Add carrots, celery, onion and potatoes to the pan.  Add Herbes de' Provence and bay leaf and saute for about 4 minutes and then add garlic and saute for about another minute, until onions are translucent.  Season with a little more salt and pepper.




Add butter to vegetables.  Once butter is melted, add flour and stir to coat all of the vegetables.




Add wine and combine well with vegetables.  Then add chicken stock, stirring constantly to incorporate well.





Add milk to mixture and stir in.  Bring to a boil and cook until thickened.  Then reduce heat and simmer for about 5 minutes, until potatoes are tender.



Once potatoes are tender, add chicken back in and peas.




Spoon chicken mixture into 4 - 2 cup ramikens.


Sprinkle a little flour on a counter or wood cutting board.  Unroll 1 pie crust.



Put a ramikin in the middle of piecrust and cut around it with about a 1 inch border (I found that a pizza cutter works really well).



Take the remaining dough and roll it out again and cut out crust for the second ramiken in the same fashion.  Repeat the procedure with the remaining ramikens with the second pie crust.





Brush each crust with egg wash (take one egg and beat it with 1-2 tbsp water) and make some slits in crust with a knife.  Bake in preheated oven for 25-30 minutes until golden brown.  Serve immediately.

Mexican Cornbread Casserole

     Last week I ran into Trader Joe's to pick up a couple of things.  If you've ever been to Trader Joe's, you know that they are always sampling something.  I, of course, had to try the sample of the day.  This particular day it was a casserole that looked like it would make a really quick weeknight meal.  They took a can of their turkey chili, put it in a casserole dish, sprinkled some cheese over that and then topped it all with their corn muffin mix and baked it.  It was delicicous, so  I took a box of the corn bread mix home with me.

    I did have to change this up to make it work for my family.  Alex will not eat chili because he doesn't like beans.  So instead of the chili, I took some pulled pork that I had in the freezer and mixed it with tomato sauce, salsa, chili powder and cumin.  If your family doesn't like pork or you don't have any on hand, you could use shredded chicken or ground beef.  Or, you could certainly use a can of chili or your own chili (just make sure it's thicker chili).


Mexican Cornbread Casserole


  • 1 package cornbread mix, for an 8x8 pan (I used Traders Joe's), batter prepared according to directions
  • 2 cups pulled pork (or whatever cooked meat you like)
  • 1 8 oz can tomato sauce
  • 1 cup salsa, whatever heat level you want (I used medium)
  • 1 tbsp chili powder
  • 1 tsp cumin
  • 1 1/2 cups shredded cheddar cheese (I used reduced fat)


Preheat oven to 350 degrees.
Prepare cornbread batter according to directions and set aside.


Mix tomato sauce, salsa, chili powder and cumin together.


Add pork to mixture and combine.




Pour pork mixture into a 9x13 pan coated with cooking spray and spread evenly.



Sprinkle cheese over the top of the pork.



Pour cornbread batter over the top and spread evenly.


Bake in preheated oven for 30-35 minutes.


Serve immediately!
